back in the days before my husband discovered he was gluten sensitive I too baked… looking at these photos makes me miss those days of yeasty smells from warm ovens.
I suppose I could bake gluten free stuff, and sometimes I do, but it’s not the same and so I just kind of dropped it altogether.

I just got a new citrus zesting tool for Christmas, and I am just looking for things to use it on other than my standby lemon rosemary roasted chicken that I make every week. For some reason, zesting is one of my favorite cooking-type things to do. It feels really fancy. So this marmalade cake recipe may be calling my name.

I just made the Orange Marmalade Cake based on the recipe in the Mitford cookbook. I was not happy with that recipe but see that yours is different. Please let me know where you got yours from. I think the original was very dry.

Hi Elaine! My recipe came from some Mitford book, but I’m not sure which one as my mom handed it to me and said, “This is the birthday cake I want!” I do recall the cake turning out delicious, but I can’t remember if it was moist or on the dry side.

I made this cake this weekend & it was a hit! We all loved it. The only thing different that I did was that I used the recipe for the 3 layer instead of the 2 layer. I did notice that they were just a little different (of course some measurements would be a little different), but I noticed that the 2 layer cake is missing oil. The 3 layer lists 2/3 C. oil. The 2 layer does not list ANY oil. Could this be the problem in someone thinking it was dry?
Having used the 3 layer recipe that called for 2/3 C. oil, there is no way this cake could be called dry! It was so moist & delicious!!!
Just thought I’d let you know what I noticed about the oil.
